Mateo learned to cook standing on a stool next to his grandmother, who never wrote anything down and never measured anything either. He trained in proper kitchens for eight years and then walked out of the last one because the tasting menu had stopped tasting of anything.

Now he cooks one menu a night for sixteen people, decided at the market that morning. He films the whole thing — the market, the mistakes, the burnt first attempt — and posts it without a script.
